Yo se que es una mierda, pero que rica que es!
Junk food is a common term used for any food item that is perceived to be unhealthy or to have poor nutritional value. The phrase was coined by Michael Jacobson, director of the Center for Science in the Public Interest, in 1972. Examples of junk food may include, but are not limited to: hamburgers, pizza, candy, soda and salty foods like potato chips and french fries. Although Chewing gum and Bubblegum are not swallowed, they usually contain sugar or sugar-alcohol. Be careful, as sugar-free gum usually uses sugar-alcohol as a substitute. While sugar-alcohol won’t cause tooth decay, it does have calories.
A diet rich in junk food is not conducive to maintaining a balanced diet, as suggested by various government and non-profit health organizations. The term has been used by many different groups over the years including opponents of fast food industries and environmentalists.
Junk food nevertheless remains popular because it is relatively cheap to manufacture, easy to purchase, is convenient to consume, and has a lot of flavor because of its typically high fat, sodium, or sugar content. Its nutritional value is typically very high in empty calories. Junk food also may contain numerous food additives, which are used to enhance flavor, adjust texture, alter color, and prevent spoilage. For this reason many junk foods are also convenient in that they have very long shelf lives and often do not require any kind of refrigeration.

The Salvadoran pupusa (from Pipil pupusawa) is a thick, hand-made corn tortilla (made using masa, a maize flour dough used in Latin American cuisine) that is stuffed with one or more of the following: cheese (queso) (usually a soft Salvadoran cheese called Quesillo), fried pork rind (chicharrón), chicken (pollo), refried beans (frijoles fritos), or queso con loroco (loroco is a vine flower bud from Central America). There is also the pupusa revuelta (with mixed ingredients of cheese, pork, and beans).
History
Pupusas are from El Salvador, and were first eaten by the Natives there almost three millennia ago. Remains of the food were even found in the Joya de Cerén archeological site. Immigrants have brought the dish to Northern California (the San Francisco Bay Area), Central California, Southern California, Virginia, Washington D.C., the Chicago area, the Houston area, and other locations, where there are now many pupuserías (a place where pupusas are sold). Pupusas are now usually served with curtido (a pickled cabbage relish)and tomato sauce.
Recipe
Yield: about 4-5 pupusas
INGREDIENTS PREP AMOUNT
Masa harina 2 cups
Water warm 1 cup
Filling (see variations) 1 cup
METHOD
Basic Steps: Mix → Knead → Rest → Portion → Roll → Pan-bake
In a large bowl, mix together the masa harina and water and knead well. Knead in more water, one tablespoonful at a time, if needed to make a moist, yet firm dough. (It should not crack at the edges when you press down on it.) Cover and set aside to rest 5-10 minutes.
Roll dough into a log and cut into 8 equal portions. Roll each portion into a ball.
Press a hole in each ball with your thumb. Put about 1 tablespoon of desired filling into each ball and fold the dough over to completely enclose it. Press the ball out with your palms to form a disc. Be careful that the filling doesn’t spill out.
Line a tortilla press with plastic and press out each ball to about 5-6″ wide and about 1/4″ thick. If you don’t have a tortilla press, place the dough between plastic wrap and roll it out with a rolling pin.
Heat an ungreased skillet over high heat. Cook each pupusa for about 1-2 minutes on each side till lightly browned and blistered. Remove to a plate and cover till all pupusas are done. Serve with curtido.
VARIATIONS
Pupusas can be made plain or filled with any number of ingredients. Cheese, chicharrones (fried pork rinds) or refried beans are the most common fillings. For a cheese filling, use grated farmer’s cheese, mozzarella, queso fresco or Swiss. If you can’t find chicharrones, grind 1 cup of cooked bacon with a little bit of tomato sauce in a food processor. Cooked potatoes or finely minced, sautéed jalapeño peppers are also tasty fillings. Try a mixture of different fillings.
The above recipe uses masa harina, a special dried cornmeal flour used in making tortillas, tamales, etc. If you are able to get fresh masa, definitely use it instead. The flavor will be much fresher. Just substitute the masa harina and water with fresh masa. One pound will make about 8-10 pupusas.
NOTES
Salvadoran restaurants that serve pupusas are called pupuserías.
Curtido, a type of coleslaw, is typically served with pupusas.
Pupusas are traditionally made by slapping the dough from palm to palm to flatten it out. I find the tortilla press to be quicker and easier for beginners.
